Mama Mia!  My Meatballs were Marvelous!

 

Ingredients:

1 pound all natural ground turkey

1 egg (beaten)

1/4 cup parmesan cheese (or to taste)

1/2 cup finely crumbled cheddar goldfish crackers

Onion Powder  or Onion finely chopped (to taste)

Italian Seasoning (to taste)

Fresh minced garlic (to taste)

Pepper (to taste)

 

 

Preparation:

Preheat oven to 370 degrees.

Combine and mix all of the ingredients in a mixing bowl.  Separate a small amount and form into desired size meatballs.    Place meatballs in a rows 1/2 inch apart in a stoneware baking dish.  Cook thoroughly (about 20-30 minutes) and remove from the oven.  Top with your favorite organic tomato sauce (I prefer garden vegetable), and a thin layer of parmesan cheese.  Return meatballs to the oven and continue baking for 5 minutes!  Remove from the oven and serve with your favorite whole grain pasta or my favorite, spaghetti squash!  ENJOY!!



Confetti Pancakes

Ingredients:

Your favorite pancake mix

1 tsp. (or to taste) Ground Cinnamon

1 Tbsp. Organic Sugar

3 Tbsp. Vanilla Extract

3 Tbsp. Ground Flax Seed

Your Favorite Colored Sprinkles

100% Olive Oil Cooking Spray

1 1/8 measuring cup

Your favorite fresh fruit

Your favorite pancake syrup

(I love my double burner griddle...but any pan will do)

 

Preparation:

Prepare your favorite pancake mix as directed in a large bowl.  Add in flax seed, vanilla extract, ground cinnamon and organic sugar.  Mix well.  Place your griddle on the stove and heat griddle to a medium heat.  Lightly spray your griddle with your olive oil cooking spray.  Spoon 1/8 cup scoops of batter onto hot griddle.  Before flipping your pancakes, sprinkle desired amount of colored sprinkles onto pancakes.  Flip your pancakes and continue cooking.  Remove from griddle and serve hot, with your favorite syrup and fresh fruit!  Talk about yummy....and your kiddos will have no clue about the hidden flax seed!
